Gochujang Avocado Cucumber Salad

During the cold seasons I like to make spicy salads to give some heat. This Gochujang Avocado Cumber Salad has been my January go-to salad.

Recipe

Ingredients

  • 2 mini cucumber, cubed

  • 2 garlic cloves, chopped

  • 1/2 avocado, cubed

  • 1/2 Cup cherry tomato halved.

  • I tsp salt.

sauce:

  • 1/2 tbsp gochujang

  • I tbsp sesame oil.

  • 1 1/2 tbsp maple syrup

  • 1 1/2 tbsp Rice vinegar

  • I pinch salt.

Garnish!

  • I tbsp chopped green onion

  • I tsp sesame seeds.

Process

  1. Salt the cucumber and let it sit as the moisture rises.

  2. Mix the gochujang, sesame oil, rice vinegar, maple syrup - adjust to taste

  3. Use a paper towel to get moisture from the cucumber.

  4. Add garlic with the cucumber.

  5. Mix the dressing on the camber

  6. Add in the diced avocado and tomato, massage it all together

Tip: refrigerate for 2-4 hrs to let the sauce soak in.

Garnish some sesame seeds for extra crunch.
